The peak of summer is all about sweet ripe mangoes, and what better way to beat the heat than with a glass of luscious, creamy and thick mango lassi?
Simple to make with only a few ingredients, this recipe is also easily customisable. You can swap vegan yogurt with vegan ice cream for a rich milkshake – like taste and consistency. It also requires little to no sugar because of the natural sweetness of the mangoes.
A healthy and refreshing drink that can be made within minutes!
- 1 cup mango pulp
- 1 cup vegan yogurt
- 1 cup plant-based milk
- 1 tbsp sugar
- ½ tsp cardamom powder
- Sliced pistachios (for garnish)
- Saffron (for garnish)
- To a blender, add all the ingredients and blend until smooth and creamy. If required, add 1-2 tbsp of water for a lighter consistency.
- Pour the lassi into glasses and place in the refrigerator to chill. Garnish with pistachios and saffron before serving.
