Vegan Blondies
Buttery, soft and chewy – these blondie bars are simply rich and scrumptious! Now, you might be wondering what the difference between a brownie and a blondie is. While brownies require cocoa, blondies are made with white chocolate and have a deep vanilla flavour and are lighter in colour and taste.
They’re velvety dense, gooey in the middle and can be made with a variety of add-ins like pumpkin spice, cinnamon, jams, nuts or nut butter. So here’s a quick and easy recipe to make the perfect blondie :
INGREDIENTS : –
- 1 1/2 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup vegan butter or coconut oil
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 flax egg (1 tbsp ground flaxseeds + 3 tbsp water : let it sit for 10 minutes)
- 1/2 cup vegan white chocolate chips (or regular chocolate chips)
INSTRUCTIONS : –
- Using a stand mixer or a hand mixer, cream together the butter and sugar.
- In a mixing bowl, sift together flour and baking powder. Add the creamed butter-sugar mixture and stir until well combined.
- Pour in the flax egg and vanilla extract. Mix to form a thick and sticky dough.
- Fold the chocolate chips to evenly incorporate.
- Preheat the oven to 350 degrees F.
- Line a baking pan with parchment paper. Transfer the blondie batter into the pan and press down to spread evenly. Top with extra chocolate chips, if desired.
- Bake for 25-30 minutes or until the top is set and lightly browned.
- Remove from the oven and let it cool for 5-10 minutes before removing the blondie from the pan. Allow to cool completely before slicing into bars.
