Double Chocolate Whoopie Pie (Vegan)
A whoopie pie is one that may be considered either a cookie, pie, sandwich or a cake. And if you’ve never had one, you should whip some up right now because these are truly decadent with each bite!
These scrumptious pies are super fluffy yet moist, and sandwiched with a creamy chocolate coconut – like filling.
Sinfully delicious and beyond easy to make!
INGREDIENTS:-
(For the cake)
- 2 cups all-purpose flour
- 2/3 cup coconut sugar / beet sugar
- ½ cup cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup almond milk (or any plant milk)
- ¼ cup vegetable oil
- 1 tsp vanilla extract
- 5 tsp apple cider vinegar or lime juice
(For the filling)
- ½ cup coconut cream or coconut milk
- 150g dark chocolate bar
INSTRUCTIONS:-
(For the pie)
- To a large mixing bowl, sift the flour, cocoa powder, baking powder, baking soda, salt and powdered sugar.
- In a small cup, combine milk and apple cider vinegar / lime juice. Mix and set aside for a few minutes or until it curdles. (You can use vegan yogurt instead.)
- To the large bowl of dry ingredients, add the oil, curdled milk and vanilla extract. Whisk until smooth and evenly combined.
- Preheat oven at 350 degrees F.
- Line a baking sheet with parchment paper. Using an ice cream scooper, drop heaping scoops of the dough onto the baking sheet.
- Bake for 10-12 minutes until firm and the edges are dry, or a toothpick comes out clean.
(For the filling)
- Place the coconut cream in the refrigerator for about 4 hours. If you’re using coconut milk, refrigerate overnight.
- Melt the chocolate bar over a double boiler or in the microwave. Once melted, allow to cool.
- Place the chilled cream and melted chocolate in a mixing bowl and beat on high speed for about 5 minutes until smooth and fluffy.
- Once the pies have cooled down, you can start assembling them. Spread the whipped cream generously on the bottom half of one cake and top it with the other cake (flat side down).
Place the whoopie pies in the refrigerator for about 20 minutes to firm up before serving.
