Crunchy Edamame Salad
Edamame beans are immature soybeans which can easily be called a “superfood” because of its high protein, calcium, vitamins and mineral content. They’re naturally gluten-free and low in calories. Adding edamame to a variety of dishes is a great idea, not just because of its nutritional benefits but because they are surprisingly filling and have a versatile flavour profile. A great salad is one that is nutritious and delicious, and including edamame is the ideal way to go!
INGREDIENTS : –
- 1 1/2 cup shelled edamame
- 1 cup romaine lettuce, roughly chopped
- 1 cup onion, thinly sliced
- 1 red bell pepper, diced
- 1 carrot, finely sliced
- 3-4 cherry tomatoes
- 1/4 cup fresh basil
- 2 tsp sesame seeds(For the dressing)
- 1 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tsp soy sauce
- 2 tsp maple syrup
- 1 tsp ginger-garlic paste
- 2 tsp sriracha
- 1/2 tsp fresh cracked black pepper
INSTRUCTIONS : –
- To cook edamame, bring a pot of water to a boil and add the edamame in pods with a pinch of salt. Cook until the shell is tender for about 5 minutes. Drain and rinse in cold water to cool. Slip out the beans and set aside.
- Combine all the salad ingredients in a large mixing bowl.
In a small bowl, whisk together all the dressing ingredients. If required, stir in water for a runny consistency. - Pour the dressing over the salad and toss to evenly coat. Top with roasted nuts and seeds, if desired. Serve immediately.
