Creamiest Vegan Mashed Potatoes

This classic homemade favourite requires only 3 key ingredients and whatever spice mix and seasoning you prefer.
With a creamy, melt-in-your-mouth texture, these potatoes are impossible to resist, and whipping them up has never been simpler!
Here’s how to make the creamiest vegan mashed potatoes:
INGREDIENTS:-
- 6 medium potatoes (about 500g)
- 1/2 to 3/4 cup plant-based milk, unsweetened
- 4 tbsp vegan butter or olive oil
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried mixed herbs
- Salt to taste
- Ground black pepper to taste
- 2 tbsp coriander, finely chopped (for garnish)
INSTRUCTIONS:-
- Peel the potatoes and cut into 1-inch cubes.
- Place the potato cubes in a large pot and cover with water. Bring to a boil, cover with a lid and let it simmer for 12-15 minutes or until soft and tender.
- Drain the water and return the potatoes back into the pot.
- Using a masher, mash the potatoes until smooth.
- Heat a saucepan over medium-low heat. Add the butter, milk, salt, pepper, herbs, onion and garlic powder. Stir until well combined and let it simmer for about 1-2 minutes.
- Pour the milk mixture into the pot of mashed potatoes and stir until it turns to a smooth, light and fluffy consistency. (Add more or less milk, depending on your preferred consistency.)
- Garnish with cracked pepper, coriander and a tablespoon of butter. Serve immediately.
