Classic Vegan Meatloaf

Meatloaf without meat? That’s preposterous!
Well, no it’s not, thanks to the array of juicy and meaty textured vegan ingredients that you probably already have in your kitchen!
Made with mushrooms, kidney beans, oats, an assortment of veggies and a few simple spices, our vegan meatloaf recipe is hearty, healthy and oozing with flavour.
This nutritious loaf is easily customisable as well – you can replace kidney beans and oats with quinoa, chickpeas and/or lentils.
Serve with a side of mashed potatoes and rice, and you’ve got yourself a wholesome and filling meal!
INGREDIENTS:-
- 200g mushrooms
- 2cups cooked kidney beans
- 11/2 cup rolled oats
- 1 cup breadcrumbs
- 1 onion, diced
- 4 garlic cloves, minced
- 1 carrot, diced
- 1/2 bell pepper, chopped
- 2 celery stalks, chopped
- 2 tbsp tomato paste
- 2 tbsp soy sauce
- 1/2 tsp paprika
- 1/2 tsp salt (or to taste)
- 1/2 tsp ground black pepper
- 1 tsp vegetable oil
(For the glaze)
- 1/4 cup ketchup
- 1/2 tbsp maple syrup
- 1/2 tsp garlic powder
- 1/4 tsp paprika
INSTRUCTIONS:-
- Heat oil in a skillet over medium heat. Add onion, garlic, bell pepper and celery stalk. Sauté until tender and the onion turns lightly golden-brown. Set aside.
- To a food processor, add mushrooms, kidney beans and rolled oats. Blend to form a coarse mixture.
- To a large mixing bowl, add the blended mixture along with the sautéed vegetables and breadcrumbs.
- Add in the tomato paste, soy sauce, paprika, salt and pepper. Stir until well-combined.
- Place the mixture in a lined loaf pan and press down for a smooth and even layer.
- Cover the top of the pan with foil and bake in a preheated oven at 350 degrees F for 20 minutes.
- Prepare the glaze by stirring together ketchup, maple syrup, garlic powder and paprika in a small bowl.
- After baking for 20 minutes, remove the loaf from the oven and spread the glaze evenly on top of the meatloaf.
- Return the pan to the oven (without covering the top with foil) and continue to bake for an additional 10 minutes or until browned.
- Remove from the oven and let it sit for 10 minutes before serving.
