Chocolate Chip Skillet Cookie (Vegan)
What’s more indulgent than a giant warm cookie that you eat right off the skillet? Absolutely nothing! The hot skillet caramelises the bottom of the cookie, gives a soft centre and a mildly crunchy top. The next time your sweet tooth kicks in, whip up a cookie sundae with a warm gooey skillet cookie topped with vanilla ice cream and a drizzle of hot fudge.
INGREDIENTS : –
• 1 cup vegan butter or coconut oil or olive oil
• 1 cup sugar
• 1/2 cup plant-based milk
• 1 tsp vanilla extract
• 2 cups all-purpose flour
• 1 tsp baking powder
• 1 tsp baking soda
INSTRUCTIONS : –
1. Preheat the oven to 350 degrees F.
2. Using a stand mixer or a hand mixer, cream together the butter and sugar. Add the milk and vanilla extract and mix until well combined.
3. To a mixing bowl, sift the flour, baking powder and baking soda.
4. Combine the wet mixture and the dry mixture. Fold in the chocolate chips.
5. Evenly spread the cookie dough into the greased skillet. Top with extra chocolate chips, if desired.
6. Bake for 25-30 or until golden brown and the edges are puffed up.
Allow to cool for 5-10 minutes before serving.
