Vegan Quinoa Pudding
Out of the many ways that this super grain can be cooked, quinoa pudding has to be the simplest!
Made with a handful of good-for-you ingredients, this pudding makes an ideal breakfast. Top with some granola, chia seeds, nuts and fruits, and kick-start your day with this nourishing bowl!
Stir in a little cocoa powder and you’ve got yourself a guilt-free dessert!
Here’s how to make this warm, creamy and wholesome pudding that’s perfect for a cozy day:
INGREDIENTS:-
- 1 cup quinoa
- 4 cups plant-based milk
- 1/4 cup maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 tsp ground cardamom
- 1 banana
- berries, dried fruits and nuts
INSTRUCTIONS:-
- To a blender, add 1 cup milk, banana, vanilla extract, cinnamon, cardamom and maple syrup. Blend until smooth. Set aside.
- Rinse quinoa in a mesh colander under cold water. Drain and add to a medium pot.
- Add the remaining 3 cups of milk and bring to a simmer over medium heat.
- Cook and stir intermittently for about 25 minutes or until the quinoa turns tender and the mixture has thickened.
- Add the blended banana-milk mixture and stir to combine.
- Cover with a lid and let it simmer on low heat for about 5 minutes.
- Turn off the heat and let the pot sit with the lid on for an additional 5 minutes.
- Serve warm with berries, dried fruits and nuts.
