Vegan Oat Flour Pancakes
Plant milk instead of milk, ground chia seeds instead of eggs, maple syrup instead of butter, and you have made yourself some vegan pancakes. It’s the perfect way to start your slow, relaxed Sundays. Make it extra healthy and gluten-free by substituting white flour with oat flour.
INGREDIENTS: –
- 1 ½ cup oat flour
- 2 tsp baking powder
- ½ tbsp organic sugar
- ½ tsp cinnamon powder
- 1 tsp vanilla extract
- 1 tbsp grounded chia seeds
- 1 cup plant-based milk
- 1 tbsp coconut oil, melted.
INSTRUCTIONS: –
- You can either purchase oat flour or make it at home by blending rolled oats in a blender until it turns to a fine powdery flour texture.
- in a large bowl, whisk oat flour, baking powder, cinnamon&powdered sugar.
- In a smaller bowl, whisk the milk, vanilla extract & coconut oil.
- Pour the liquid mixture into the dry mixture and whisk till well combined and the batter has no lumps.
- Let the batter rest for 5-10 minutes.
- Heat a non-stick pan to medium heat. Grease the pan with a little bit of vegan butter or oil and start cooking your pancakes.
Cook for about 3 – 4 minutes or until golden brown.
Top it with either maple syrup, peanut butter, coconut cream, or chocolate sauce.
