Spaghetti With Avocado Sauce Vegan
Out of all the sauces that you can toss spaghetti in, this avocado sauce is probably the healthiest, creamiest and most luscious of them all!
This vibrant bowl of spaghetti is filled with the buttery goodness of avocados, and with zesty flavours of lime juice, spices and herbs. You can also sneak in some spinach or kale for a more wholesome meal.
With only a handful of ingredients, this recipe is a breeze to make and a definite must-try!
INGREDIENTS:-
- 200g spaghetti
- 1 avocado, peeled and pitted
- 1/2 cup fresh basil leaves
- 2 cloves garlic, minced
- 1/2 onion, roughly chopped
- 1 green chilli, roughly chopped
- 1/4 tsp crushed black pepper
- 1/4 tsp salt (or to taste)
- 1 lime, juiced
- 1/2 tsp red chilli flakes
- 1/2 tsp oregano
INSTRUCTIONS:-
- Bring a large pot of salted water to a boil. Add the spaghetti and cook for 10-12 minutes or as per the package instructions.
- Once the pasta is thoroughly cooked, reserve 1/4 cup of the pasta water and drain out the rest. Set the pasta aside.
- To a food processor, add the avocado, basil leaves, garlic, onion, chilli, pepper, salt, lime juice and the 1/4 cup of pasta water. Process until smooth. (Add more water if you prefer a thinner sauce.)
- To the pasta, add the avocado sauce, chilli flakes and oregano. Stir to well-combine. Serve Immediately.
