No-bake Vegan Strawberry Pie

INGREDIENTS:-
(For the crust)
- 1 1/2 cup graham crackers or digestive biscuits, crumbled
- 5 tbsp vegan butter or coconut oil
- 1/4 cup maple syrup
(For the filling)
- 4 cups strawberries (for the sauce)
- 4 cups strawberries (for the topping)
- 1/2 cup maple syrup
- 1 tsp vanilla extract
- 1 tsp lemon juice
- 3 tablespoons corn starch + 2 tablespoons water (slurry)
INSTRUCTIONS:-
(For the crust)
- To a blender, add the crackers, butter and sugar. Blend to a thick and coarse mixture.
- Press the mixture to the bottom of a 10-inch pan and up the sides, making sure it is tightly held together.
- Using the bottom of a flat cup, press down for an even base.
- Refrigerate the pan for 20-30 minutes.
(For the filling)
- To a food processor, add all the filling ingredients and blend until smooth and lump-free.
- Transfer the blended mixture to a saucepan and bring to a boil. Reduce the heat and let it simmer for 3-4 minutes.
- Allow the mixture to cool completely before pouring it into the crust. Spread evenly and smooth out using a spatula.
- Place each strawberry onto the filling, starting from the perimeter of the crust and circling to the centre of the pie.
- Place the pie in the fridge and let it chill for 5-6 hours to firm up. Cut and serve with a dollop of whipped cream topping.
