Broccoli Rice (Keto + Gluten-free + High-Fiber)
Rice has been our beloved staple food for a very long time – until the birth of keto diets, which in turn gave birth to cauliflower rice (or cauliflower “everything”).
However, the lesser-known broccoli rice is starting to make its name in the food world. It boasts more fiber content than our friendly cauliflower and is one of the best ways to increase your daily greens. With less time and effort than making actual rice, try this simple recipe with your next curry, wrap, stir fry, salad, breakfast burrito, or just about anything.
INGREDIENTS:-
- Medium or large head of broccoli
INSTRUCTIONS:-
- Thoroughly clean, wash and dry broccoli.
- Remove the leaves and it’s hardcore.
- Cut the broccoli into florets and pulse in a food processor until it becomes rice-sized bits. For an even texture, work in batches and don’t over-process.
If you don’t have a food processor, you can use a blender or a knife. - Heat 1 tbsp of oil in a large skillet and add the raw broccoli rice and sauté for about 3 minutes or until tender and lightly browned.
- Season with salt, pepper, and a squeeze of lime juice.
