Bread Upma

A simple twist to the South-Indian breakfast staple – bread upma!
Made with veggies and spices that you probably already have in your kitchen, this dish replaces rava (semolina) with toasted bread.
It’s crunchy, it’s different and it makes for a great breakfast or tea-time snack!
Here’s how to make this uber simple bread upma :
INGREDIENTS:-
- 6 bread slices
- 1 tbsp olive oil
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 4-5 curry leaves, chopped
- 1 onion, finely chopped
- 2 pods garlic, finely chopped
- 1 green chilli, chopped
- 1 tomato, finely chopped
- 1/2 tsp ginger paste
- 1/4 tsp turmeric powder
- 1/4 tsp chilli powder
- Salt to taste
- 1/2 capsicum, diced
- 1/2 lime, juiced
- 5 – 7 cashew nuts, toasted
- 1 tbsp coriander leaves, chopped
INSTRUCTIONS:-
- Using a pan or a toaster, toast the bread until lightly golden and crisp.
- Cut the toasted bread into cube and keep aside.
- Heat oil in a pan over medium heat. Add mustard seeds, cumin seeds and curry leaves, and sauté until they sputter.
- Add onion, garlic and chilli. Sauté until the onion turns translucent.
- Stir in the ginger paste, salt, turmeric powder and chilli powder.
- Add the capsicum and sauté until they turn tender.
- Add the bread cubes and drizzle lime juice. Stir until well combined with the mixture.
- Garnish with toasted cashews and coriander leaves. Serve immediately.
