Avocado Pancakes (Vegan + Gluten-free)
We all know how imperative a nutritious breakfast is. A balanced breakfast would ideally include high amounts of protein, fiber, healthy fats and calcium, along with essential vitamins.
This whole-grain avocado pancake recipe can easily go down as one of the healthiest vegan breakfasts out there. We’ve kept it simple with a 7-ingredient batter, you can however, make it more nutritious by adding in chia seeds, ground sunflower & pumpkin seeds, protein powder or hemp powder.
INGREDIENTS:-
- 1 1/2 cup oat flour
- 2 tbsp maple syrup or sugar
- 2 tsp baking powder
- 1/2 tsp vanilla extract
- 1 ripe medium-sized avocado, mashed
- 1 cup plant-based milk
- 1 tbsp coconut oil or vegan butter
- 1 tbsp chia seeds (optional)
INSTRUCTIONS:-
- Place all the ingredients in a blender and blend until smooth.
- Heat a skillet over medium heat and grease the pan with oil.
- Using a ladle, pour the pancake batter and spread into an even circle.
- Cook for about 2 minutes or until bubbles start to appear and the edges start to dry. Then, flip over and let it cook for 1-2 minutes or until lightly golden and the centre is cooked. Repeat for the rest of the batter.
- Serve immediately with desired toppings.
