Avocado Mousse
Who thinks of a dessert and then immediately comes up with avocado?
Not you, right?
But hear this out. With the right flavoring, you wouldn’t even be able to guess the avocado, but instead, you’d have the perfect mousse textured healthy dessert. (Filled with healthy fat and natural sweetener!)

INGREDIENTS:
- 2 ripe avocados
- ¼ cup coconut milk
- 1 tbsp almond butter creamy
- ½ tsp vanilla extract
- 2-3 tbsp date syrup/ maple syrup/ sweetener of your choice
INSTRUCTIONS:
- Scoop out the flesh of the avocados and add to a blender. Blend to a smooth consistency.
- Add the remaining ingredients and blend until creamy and smooth.
(Note – If you do not prefer an overpowering avocado flavor, add ½ cup of frozen bananas or a little extra nut butter.) - Spoon into glasses, cover with a lid and refrigerate for at least 2 hours for a mousse-like texture.
- Top with granola, cocoa nibs, or berries and serve.
