No-Bake Avocado Cheese Cake

INGREDIENTS:-
(For the crust)
- 1 1/2 cup graham crackers or digestive biscuits crumbled
- 5 tbsp vegan butter or coconut oil
- 1/4 cup maple syrup
(For the filling)
- 3 avocados, peeled and pitted
- 1/4 cup coconut cream
- 1/2 cup maple syrup
- 1 tsp lime zest
- 2 limes, juiced
INSTRUCTIONS:-
(For the crust)
- To a blender, add the crackers, butter and sugar, and blend to a thick and coarse mixture.
- Press the mixture to the bottom of a 10-inch pan and up the sides, making sure it is tightly held together.
- Using the bottom of a flat cup, press down for an even base.
- Refrigerate the pan for 20-30 minutes.
(For the filling)
- Process all the filling ingredients in a blender to a smooth purée.
- To the chilled pan, pour the avocado purée over the crust and even it out using a spatula.
- Return to the refrigerator and chill for at least 4 hours or until thoroughly firmed.
- Cut into slices and serve.
