Mixed Berry Cobbler

Celebrate the season’s sweetest fresh fruits by making this luscious cobbler which is particularly more decadent when topped with a dollop of whipped cream or a scoop of your favorite ice cream.

INGREDIENTS:-
- 4 cups of mixed berries
- 1 tsp lemon juice
- 1/4 tsp cardamom
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 3/4 cup coconut sugar
- 1 cup all-purpose flour
- 2 tsp baking powder
- 3/4 cup plant-based milk
- 1 tsp vanilla extract
- 1/2 cup vegan butter, melted
INSTRUCTIONS:-
- To a mixing bowl, add the mixed berries, cardamom, cinnamon, lemon juice and nutmeg. Stir until well-combined. Set aside.
- Pour the melted butter into a baking pan and spread evenly.
- In a mixing bowl, combine the flour, baking powder, sugar, vanilla extract and milk to form a smooth batter.
- Pour the batter into the baking pan.
- Dollop the mixed berry mixture over the batter (make sure to not stir the batter and berries together).
- Sprinkle a tablespoon of sugar on top and place in a preheated oven at 375 degrees F. Bake for 45-50 minutes or until the top turns golden brown.
- Remove from oven and allow the pan to cool for about 20 minutes before serving.
