Vegan French Crepes (Gluten-free + Sugar-free)
These French like pancakes are thin, crinkly and paper-like, andhave to be one of healthiest, easiest and most versatile dishes out there!
A variety of sweet and savoury stuffing can be rolled inside a crepe. From cream cheese, peanut butter, caramel sauce, fresh fruits & berries, to spinach & mushrooms, cheesy corn, sautéed veggies, the list is endless!
Here’s how to make these gluten-free, 6-ingredients-only vegan crepes :
INGREDIENTS:-
- 1 1/2 cup oat flour (or any gluten-free flour)
- 1 cup coconut milk (or any plant-based milk)
- 1 cup sparkling water
- 1 1/2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tbsp vegan butter or coconut oil
INSTRUCTIONS:-
- To a large mixing bowl, sieve in the oat flour.
- Add the remaining ingredients and using either an electric beater or a hand mixer, beat to form a smooth and runny batter. (Note : the batter must be thinner than pancake batter.)
- Heat a non-stick pan over medium heat and grease with a tablespoon of oil.
- Pour in 1/2 cup batter and tilt the pan in a circular motion so that the batter evenly covers the surface of the pan. (Note : Adjust the quantity of batter that you add depending on the size of the pan.)
- Cook for about 2 minutes or until it turns dry and crisp, flipping it over to the other side. Continue to cook for 30 seconds to 1 minute.
- Slide the crepe onto a plate and serve with any desired topping.
